Single-serving vegan apple crumble
Have you ever just wanted a single serving dessert all to yourself? As someone who never wants to share food with others, this healthier, vegan, single-serving apple crumble recipe is the perfect treat for you to try.
During the holidays, especially on the fourth of July, my family always craves apple crumble. However, whenever my dad is in charge in the kitchen, he always uses butter which is a dairy product and as we know, dairy is responsible for 62% of all carbon emissions produced by the food industry. In my household, both my mom and my sister are vegan, so they were never able to eat the amazing dessert. This is when I decided to create a vegan apple crumble that uses coconut oil instead of butter and substitutes granulated sugar for coconut sugar.
This recipe is not only more sustainable, but also relatively healthy compared to many other recipes out there. Another positive is that this is single-serving, meaning you can indulge the whole thing yourself.
Ingredients
*1/2 an apple
*1/2 tsp cinnamon (or as much as you like)
*1 tsp maple syrup
Crumble:
*1/4 cup oats
*2 tbsp coconut flour or oat flour
*1 tbsp coconut oil (can sub for nut butter)
*1 tbsp coconut sugar (can sub for maple syrup)
*A dash of milk if needed
*A pinch of salt
Method
Preheat oven to @180C
Chop up your apples into cubes and mix together cinnamon, maple syrup, and chopped apples in a pan on the stove until the apples become slightly soft. Then place in an oven safe dish.
Mix the ingredients for the crumble and place the crumble on top of the apple mixture with your hands
Bake @180C for 15 to 20 minutes/ Air Fry @180C for 10 - 15 minutes
Optional *but recommended* top with vanilla ice-cream or any flavor you like.
