Rice paper oreo & jam mochi hack
Hi everyone, welcome to the blog. I know it has been quite some time since I have posted a new recipe but I have been wrapped up in studying for the Advanced Placement exams. Thankfully I was able to complete all my exams in the first week of May which means I can finally curate sustainable recipes and blog posts for you all just in time for some summer fun.
While I was in the kitchen the other day, waiting for my almond flour peanut butter chocolate chip cookies to bake in the oven, I was trying to find a way to pass time. Hence, I looked in my cupboard and saw Vietnamese rice paper, as well as packets of oreos (did you know that oreos are naturally vegan?). I then opened my fridge and in front of me was a glass of vegan whipped cream. It was then and there, I decided to create Rice-paper mochi wraps—the perfect, light and fluffy, sweet treat on a hot summer’s day.
*Disclaimer: this is not the same as japanese mochi, the texture of rice paper is a bit chewier, however this recipe still makes for a delicious treat. The fillings can be altered to your personal preference.*
Ingredients
Vietnamese Rice Paper
Vegan Whipped Cream
Chopped Fresh Fruit (e.g. strawberries, blueberries, raspberries, bananas…)
Biscuits (e.g. oreo, biscoff, graham crackers…)
Jam (e.g. strawberry, blueberry, blackberry, raspberry…)
Method
Prepare two plates, pour water onto one plate and leave the other for later.
Take the rice-paper and dip the sheet into the water on the plate for about 3 seconds.
Place the soaked rice-paper on the dry plate and leave for around 30 seconds so the rice-paper can fully soften.
Place the fresh fruit, biscuits, jam, or whatever filling you like; then place whipped cream on top of filling.
Gently fold the rice-paper until sealed.
Enjoy right after making or place into the fridge to prevent melting of whipped cream.
