Pumpkin pie stovetop oats

It’s fall season and we all know what that calls for… Pumpkin Pie Stovetop Oatmeal. This oatmeal recipe is perfect for a chilly morning, when all you crave is a cozy, warming breakfast. Ingredients: 

Dry → 

*½ cup oatmeal (I used a mix of blended and instant oats to result in a creamy concoction) 

*1 tbsp chia seeds (I simply eye-balled the amount I used) 

*1 tsp cinnamon/ pumpkin spice (again I didn’t really measure, just added as much as my heart desired) 

*Pinch of salt 

1 scoop vanilla protein powder (optional) 

Wet → 

*⅓ cup pumpkin puree (you can substitute this with apple puree, mashed banana, sweet potato puree, etc; however it would not longer be a pumpkin pie oatmeal) 

*1 cup (or more) of any plant milk or water (I used a mixture of water & almond milk) 

1 egg white (optional)

Toppings → 

*Greek Yogurt (I used fage) 

*Berries & fruits (I used kiwi)

*Nut butter (I used sunflower seed butter) 

*Drizzle of sweetener (I used honey) 

*Nuts & seeds

Method

Place oatmeal, chia weeds, cinnamon, salt, pumpkin puree, and almond milk in a pot and set on the stovetop at low to medium heat. 

  1. Slowly mix the ingredients until oatmeal absorbs liquid; let mixture sit until all liquid is absorbed. 

  2. Note: For a creamier oatmeal slowly add more milk or water and mix. 

  3. Mix egg white into oatmeal; make sure to stir continuously to make sure the egg white does not clump up. 

  4. Take the pot off of the heat and mix in your choice of protein powder along with some liquid. 

  5. Transfer cooked oatmeal to a bowl and add any toppings you would like. 

  6. Enjoy!
