Blueberry muffin stovetop oatmeal

Christmas is just around the corner and if you are looking for a cozy, warm, comforting breakfast that tastes exactly like a blueberry muffin, search no further. I present to you the best ever blueberry muffin stovetop oatmeal that quite literally tastes like a hug in a bowl. This recipe utilizes simple and sustainable ingredients that can be found right in your pantry or at your local market. For the ingredients and method, scroll down.

Ingredients: 

*½ cup oatmeal (I used instant oatmeal but you can use rolled oats or oat flour) 

*1 tbsp chia seeds 

*Dash of cinnamon 

*Pinch of salt 

*1 tsp vanilla extract 

* ⅓ cup blueberries (I used frozen)

*1 cup liquid (I used a mixture of almond milk and water; you can use oat milk, soy milk…)

*1 tbsp sweetener (you can use honey, maple syrup, agave, monk fruit…) 

*Optional: 1 scoop vanilla protein powder (if you use this, you may not need to add a sweetener as protein powder adds sweetener or vanilla extract as the protein would add a vanilla flavor already)

Toppings

*Nut butter (peanut butter, almond butter, hazelnut butter, sunflower seed butter, tahini, etc) 

*Greek Yogurt 

*Nuts & seeds 

*More berries or sliced fruits 

Method: 

  1. Place oatmeal, chia seeds, cinnamon, salt, vanilla extract and your choice of liquid and sweetener into a stovetop safe pot. Bring the stove to low-medium heat and slowly stir. 

  2. Optional step: once the oatmeal has absorbed most of the liquid, add a scoop of protein along with a dash of milk and stir until combined/ creamy consistency. 

  3. Then add the frozen blueberries into the oatmeal mixture and stir until combined. 

  4. Serve in a bowl with toppings such as nut butter, fruits and yogurt. 

  5. Enjoy!
